It's Sunday night and here in the Wendy/Koichi abode, that means... SANDWICH SUNDAY! I've really grown to love our weekly night of sandwiches. Not being one to want to make and eat the same thing all the time, I've been looking for new interesting sandwich ideas.
Last night a cookbook I recently ordered arrived and lucky me it has a whole section of sandwich recipes! The book, "Cook This Not That" is really cool. I bought one of the "Eat This Not That" books while I was home and was checking online recently to see what all they've come out with when I discovered the cookbook! As I'm trying to find ways to cook delicious, but healthy food lately I was so excited!
Tonight I made my first meal, shrimp rolls. They're a suggestion in place of Lobster Sliders at Uno Chicago Grill. I've never been to one, so I don't know what they're like, but according to the book the restaurant version has 620 calories and 26 grams of fat with 1240 mg of sodium! The shrimp rolls, prepared as directed, have 300 calories, 9 grams of fat and 470 mg of sodium!
My version of the shrimp roll served on a toasted baguette with potato chips! Koichi loves shrimp and he loves sandwiches so I figured this one would be a hit...and it was!
Now I've got tomorrow's breakfast and lunch in the oven! One of my favorite websites is Hungry Girl and I remembered a mail update awhile back with ideas for quick breakfasts. One of the suggestions she had was her Ginormous Oven Baked Omelette. As a matter of fact, the oven timer just went off so it's done. I'm going to let it cool and then cut it up for tomorrow!
The omelette straight out of the oven! The recipe calls for egg substitute, but I've never seen any in Japan so I just take out some of the yolks. I used 10 eggs total and only 4 yolks. To the eggs I added fat free milk, reduced fat shredded cheese, tomatoes, onions, bell peppers and mushrooms. It's a good thing I'm full now or I'd probably eat it all tonight and be stuck trying to figure out something for breakfast in the morning.
Starting tomorrow we have a summer program at school. We have class from 10-11:30, then lunch, then class from 1-2. The participating kids are all bringing their own lunch boxes or "bento" in Japanese. Koichi has a bento box that we bought awhile back because I started making his lunch for him, but I didn't have one. So tonight I decided to buy one so I can take my lunch too!
Isn't it cute?! It was marked 50% off too which in my mind makes it even cuter!
